No-bake ENERGYmmmmm bars!

For the longest time I have had this fascination with every bars (and also energy balls - or laddoo's). Recently our Triathlon inspiration Malhar Ganla, inspired a few of us to start a 12-hr fasting diet (no food from 6pm to 6am). Malhar has the unique quality that he can look at you straight in the face and say - you are carrying the extra weight of a 5 year old child in your body.. and you better get rid of it... fast!
I'd been thinking what do about early morning pre-run meals (strict instructions from Malhar - no running on an empty stomache), and also what to do when Im still working at 6pm in office and no meal in sight! (Bhel puri from Anna doesnt count as a wholesome meal ;-)
This Sunday it did it, I made it my Sunday morning project to try out this awesome, healthy and super tasty no-bake energy bars recipe. Took less than 45 minutes to make, and turned out super delicious. A few friends had come over last evening, and after dinner I offered them my energy bars as desert. I could see the happy face turn into a doubting frown. But I insisted. They packed a few of my bars and took them home with them!!!
So here goes....
- 1 cup packed dates, pitted
- a handful of raisins
- 1/4 cup honey
- 1/4 cup creamy salted natural peanut butter
- 1 cup roasted unsalted almonds, loosely chopped
- 1 1/2 cups rolled oats
- two teaspoons of sesame seeds
- sunflower seeds, watermelon seeds, or any other fruit seeds
- optional additions: chocolate chips, dried fruit, nuts, banana chips, vanilla, etc.
